“Mmmmmmmm it smells like BO in here!…. we must be having Mexican food for dinner”. That’s what my oldest son used to say as he came in from wrestling practice. Something about the smell of cumin and chili powder that smells slightly BO ish. Good thing it tastes better than it smells.
This soup doesn’t need all day to cook. It’s a great filling healthy weeknight dinner.
Ingredients.. For two to three people or two people with leftovers for lunch
double this recipe for a family of four.
I use organic ingredients.. It either tastes better to me or its all in my head. Lots of stuff listed but its common pantry items
Chicken- 2 boneless breasts or 4 boneless thighs. chopped or shredded.. Can start with raw
(Organic chicken tends to be normal sized….. I mean smaller so base your amount on how much you want to eat
1-2 cups chicken broth
3 cups water
1 bay leaf
1 tablespoon cumin
1 tablespoon chili powder
1/2 tsp oregano
2 cloves garlic chopped or 1 tsp garlic powder
1 small onion chopped
1 can casa verde or 1 can diced tomatoes with chilies
1 can black beans (I use organic tri-bean blend)
1 cup frozen corn
Put all the above in a soup pot… Save some cilantro for topping.
Cook on medium heat for 45 mins or until chicken is cooked and tender.
Serve in large soup bowl, top with the following.
1 jalapeño chopped…..optional
Green onions chopped
Salt and pepper to taste
Shredded cheddar cheese
Sour cream or dollop of plain Greek yogurt
Tortilla chips coarsely crushed or strips
Don’t forget to take the leaf out. 😏
